Sour Cream Coffee Cake with Toasted Pecan Filling


This was my first time making this recipe. I found the recipe in the Fine Cooking magazine. The cake was actually gone in 2 days(and it was a big cake). I took some to work to share w/ friends. The kids had it for breakfast 2 days in a row. I had atleast 2 pieces. William took some to work w/ him. Everyone loved this coffee cake. I plan to make this recipe again. It did take time, there are alot of steps to make this cake but it was worth it. Very good taste/texture.

heat the oven to 350

butter a 10-in tube pad w/ a removable bottom

for the topping: in a 2-qt pan heat 4 Tbs. butter over medium until melted. remove and cool to tepid.
in medium bowl: combine 2/3 cup flour, 1/4 cup toasted pecans(coarsely chopped), 2 Tbs granulated sugar, 2 Tbs. light brown sugar, 1/2 tsp ground cinnamon, 1/4 tsp. baking powder, 1/4 tsp. table salt.
Add the flour mixture to the butter and stir until evenly moistened and crumbly.

For the filling: In a food processor, pulse 1 cup toasted pecans, 3 Tbs. granulated sugar, 3 Tbs. light brown sugar, 1 1/2 tsp. ground cinnamon, 1 tsp. Dutch-processed or natural cocoa powder. pulse 4-6 times to combine and chop the pecans

for the Cake: In medium bowl, whisk 3 cups sifted cake flour, 1 1/2 tsp. baking powder, 1 tsp. baking soda, 3/4 tsp table salt.
In mixer, use paddle attachment: beat 1 1/4 cups unsalted butter, slightly softened. Mix on med until smooth and creamy, 1-2 minutes. Add sugar slowly:1 2/3 cups super fine sugar (food process granulated until fine like sand)
Scrape bowl.
Beat in 4 large eggs-one at a time
scrape bowl and blend in 2 tsp vanilla
on low speed alternate adding dry ingredients and 2 cups of sour cream in 3 parts(start w/ flour)
scraping bowl as needed

layer and marble batter and filling
spoon 2 cups batter into the buttered pan.
smooth w/ back of a large spoon. Sprinkle ~1/2 cup of the filling evenly.
next layer : 2 cups batter - smooth spoon
sprinkle 1/2 cup filling and then 2 more cups of batter
last of filling, last of batter
(should be 4 layers of batter and 3 of filling
insert a knife 1" from the side of the ban and straight into the batter almost to the bottom...run knife around the pan 2 times w/o lifting up the blade(spaced 1"
smooth the top w/ back of spoon

add topping: squeeze firmly the streusel crumbs to form large clumps..sprinkle small clumps all over the cake
Bake(70-75min) until the top is golden brown and the sides are beginning to pull away from the sides and skewer comes out clean. cool for ~1 hour before removing from the pan.

Rollerland



We celebrated w/ my nephew Kaden today. It was his 8th Birthday! We went to Roller Land in Merced. I havent been there since the 80's(?). The skates they had were probably the same ones (from the 80's)--brown leather skates w/ the orange wheels. Each wheel was a different size so the skates didnt roll straight. William came away with a blister.
It was a really fun time. All of the kids skated and most of the adults. I would deffionately take my own skates if I went back But The kids loved it. Liam had been there for his school skate night so he was pretty good. This was Rileys 1st time. She held to the wall mostly I tried to hold hands but she wanted to be independent --towards the end we held hands and went around the rink a few times. Skating was a good workout --I could feel it in my legs! AND I'm proud to say I didnt fall once (I was a bit wobbly in the beginning though).
We all left there and went to Mikes for the cake part. Kaden seemed to have a nice time.

Pillars of the Earth


I just finished reading this book, The Pillars of the Earth by Ken Follette. I really enjoyed it. It's a 1000 page book and It was very detailed so I was really able to really imagine what the towns and castles looked like. It was a story about many people. Their lives..how the life of one affected the life of another. There was so many characters...
The story starts out with a family and then the family comes across the monastary...then the story is all about the monastary...then back to the family...then to another character...
It always takes me a few chapters to "get into a book". When I started reading Pillars - I thought it was odd the way the story jumped..but a little into it I realized it had a rhythm. And--it was important to show the relationships(and there were so many..)
William read this book before me. While I read this, he was reading the next book(World Without End). He said he was dreaming Kingsbridge in his sleep.

I am planning to read the 2nd book also. I probably would have started right away but he was still reading it. So I started a new book(I Know This Much is True by Wally Lamb)

Wydie park





This is January in California. Riley and Liam are in shorts...Liam and Will and myself are in short sleeves.
We brought the kids to this park. It's in a new neighborhood, so it's not very crowded...we call it Wydie park. It has basketball, baseball and playground.

Fancy Meatloaf


This is my Martha Stewart meatloaf. I call it "fancy meatloaf" I made alot and took dinner over to Grandmas house to feed everyone. I really like cooking for alot of people.
This dinner fed Aunt Melinda, Uncle Bernd, Mom, Dad, Becky & kids, William & our kids.
I saw this on the Martha Stewart program awhile ago. You make your meatloaf recipe. Bake it in 2 cake pans. Make mashed potatoes, and whip them until they are very smooth and w/ no lumps. Then you frost the meatloaf with the potatoes- just like you are frosting a cake.
For the decorations you can fill a pastry bag or ziplock bag with some (very smooth) potatoes and pipe on some decorative puffs. Use some veggies to garnish. I used carrots. Last one I made, I used green peas and carrots for the garnish.
Alot of family is here because Grandma is not doing well. She's on hospise care now. I don't have alot of things to say about the situation because I'm so emotional about it. But, I wanted to provide a dinner for everyone. It fed and made everyone happy.
